How can youtubers mod stages from online fights?

Several youtubers like to change the stage of pro players fights like Daigo or Tokido (from Twitch). How can they install it into a Twitch video?

They (the youtubers) view the replay of those pro players' fight within their own games, thus if they also use mods (characters or stages), those things will also change what they see in replay.

Oh, I didn't know that. Can you see a fight online within your own game?

That's what "replay" used for, we can view other people's online fight (or your own fight) with that feature.
